Dandelion plants are found in most countries as weeds. They however have can be eaten. The leaves are quite bitter and add a spice to salads. Blanching the leaves will remove some of the bitterness. The flower petals can be used in the dandelion wine. The roots can be roasted and ground and used as dandelion coffee.
The leaves are rich in vitamins and minerals. The leaves are also thought to be an internal cleanser and used to detoxify the liver, kidneys and gall-bladder.
It has also proven to be useful as a companion plant - the tap root bringing up nutrients from deeper in the soil.
