Melissa officinalis Lime Balm is a hardy, semi-herbaceous perennial that grows to about 1 metre tall.
In cooler climates it will die back a bit in winter, but as it is a perennial will always comes back again as soon as it warms up.
Apart from its attractive, aromatic foliage, it also produces pretty white flowers in summer - making it a nice addition to both mixed borders and herb gardens.
Use it in salads or in herbal teas for a refreshing change from lemon flavours.
The leaves can be added fresh to salads and contributes well to egg, pork and fish dishes.
It has antibacterial properties and can be used to relieve insect stings and bites.
An infusion of lime balm with a few leaves of Stevia added along with some fresh spearmint makes a refreshing and calming afternoon tea.
It can also be served chilled as a summer drink.
And a favourite use is to mix with chopped chives and melted butter to coat fresh steamed chat potatoes. Delicious.
