A hardy vegetable best suited to cooler climates and therefore grow best over winter in Australia.
Each head is similar initially to a cabbage before the cream rosettes appear in the centre.
These will open out to almost a half sphere - but take care that they do not get too tough before harvesting.
Plant in mid summer in trays and plant out the seedlings by late summer.
Best to harvest when they are tender, just before full size.
