Cornsalad is also known as Mache and Lambs Lettuce. This variety grows as a fine textured little low plant that produces soft and tender spoon-shaped greens with a delicate nutty flavour.
If allowed to go to flower, the tiny white flowers attract beneficial insects. It will also self-seed from then on quite well, which is good for ongoing crops.
VERDE DE CAMBRAI, Corn Salad, can also be picked for use as bouquets. It has smaller spoon shaped leaves and a slightly richer flavour than LARGE DUTCH. It is great in salads where it gives an interesting flavour.
Germination is poor in warm conditions so it is best grown in the cooler times of the year. Frosts enhance the flavour of the leaves.
Plant seeds in a rich fertile loam in full sun approximately 1cm deep and 2.5cm apart. Thin the little plants to approx. 10cm apart in rows or wide beds.
Directly sow the seeds in late summer for winter and spring harvests and keep the seed bed moist. It takes VERDE DE CAMBRAI 70 Days to reach maturity.
Corn Salad has very few pest problems.
